Keto Halloween Sugar Cookies
Ingredients:
2 cups almond flour
2 tablespoons coconut flour
1 teaspoon baking powder
1 teaspoon xanthan gum
2 teaspoons cinnamon
1 large egg, room temperature
2–3 tablespoons “Perfect Keto Snickerdoodle Nut Butter“
2 tablespoons grass-fed butter or coconut oil2 teaspoons non-alcoholic vanilla extract
Preheat oven to 300°F, line a baking sheet with parchment paper and set aside. In a large bowl, mix together all of the dry cookie ingredients, until well-combined. In a medium-sized bowl, mix together all the wet ingredients. Add the wet ingredients to the dry ingredients, mixing to combine. Place the dough on a sheet of parchment paper on your countertop, and use a rolling pin to roll out the dough (works best if the rolling pin is lightly greased with butter).Use your cookie cutters to make the cookies and place the cookies on the baking sheet lined with parchment paper, and bake for 16 minutes.
